POWDER AND PARTICLE PROCESSING – Applications – Life Sciences – Food – Processing of Peas (protein enrichment)

The seeds of papilionaceous plants are called peas or beans. They belong to the most popular types of vegetables and are characterised by a high percentage of high-grade storage proteins, e.g. legumin and vicilin. Peas are greatly valued as a result of their high protein content – particularly in the animal feed industry. The protein-rich pea flour is used in animal husbandry, whereas the low-protein product is used in foodstuffs, baby food, cosmetics and mast fodder.

The properties of pea flour also make it ideal for use in the manufacture of soups and bakery
products such as pizzas, etc. for human consumption.
There are no gastric effects caused by fibrous materials and the DNA purity is guaranteed.

For the production of protein-enriched pea flour, Alpine supplies special processing systems to process whole peas into a high-protein and a low-protein pea flour.
The peas are precrushed with an Alpine HA hammer mill, and the shell fraction is subsequently separated using an Alpine MZM zigzag classifier.

For the protein enrichment step, the precrushed and cleaned material runs though a metal separator before entering the Alpine Zirkoplex ZPS classifier mill for fine grinding. As shown in the flowsheet, this classifier mill is switched in-line and upstream of an Alpine Turboplex ATP ultrafine classifier, which separates the pea flour into a high-protein and a low-protein fraction.
The high-protein product is separated from the classifying air in a downstream automatic reverse jet filter.
Dependent on the required protein values in the end product, the amount of high-protein pea flour extracted from the mass flow is approx. 35% and of low-protein pea flour approx. 65%.

The product separation can be varied by altering the system parameters.
Protein values from up to 60% are possible in the protein-rich fraction.

The schematic shows a system configuration for protein enrichment.
